Baked Mexican Penne

So tonight was the second time that I made this dish, it was a hit the first time around and I forgot to add it into the rotation…think it’s about time to add it in! I originally found and pinned this recipe on my Pinterest board so that I wouldn’t forget to make it – it just looked so good. And the great thing was, it tasted just as good as it looked.


Ingredients [Serves 6-8]

  • 1/2 box penne
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 jars salsa (2-16 oz)
  • 1-15 oz can black beans, drained and rinsed
  • Salt & pepper
  • 2 c shredded cheese


  1. Preheat oven to 350 degrees
  2. Cook penne according to directions
  3. In a large non-stick skillet, brown and drain ground beef. Add oil, garlic, peppers and onions. Saute until softened, about 10 minutes. Add spices. Add meat mix to large bowl with black beans, salsa and pasta. Toss to combine.
  4. Pour half of the pasta into casserole dish. Spread 1 cup cheese over pasta, add rest of pasta and top with remaining cheese. Place in oven and cook 30-35 minutes.
